Cooking Pork Ribs in the Flaming Coals Offset Smoker

Step 1: First, trim off all extra fat and the membrane from the back of the ribs.

Step 2: Use your favourite pork seasoning; today we're using 'Powerhouse Pork' from the Slow Burner BBQ.

Step 3: Insert the rack into the Flaming Coals offset smoker, which must be set to 275 degrees.

Step 4: Remove the rack when the meat starts to separate from the bone and cover it in foil with butter, brown sugar, and honey.

Step 5Place back into the offset until they are 195° to 205°F, meat side down.  At this temperature, fat and collagen throughout the meat have broken down and flavoured the ribs.

Step 6: Put them in offset for 10 minutes to allow the glaze to set after glazing with your prefered rib glaze or barbeque sauce.

Step 7: Before slicing, remove from the offset and give it time to rest.
