Delicious Bacon Wrapped Chicken Fatty cooked in the Flaming Coals Offset Smoker

Method: 

1. Get your bacon wrap ready! We are utilising long rindless bacon in today's recipe! Trim your bacon into even pieces and spread it out on a cutting board. Here, the more work you put in, the greater the outcome! Therefore, take your time and sort the bacon pieces.

2. Start putting together your diagonal bacon weave. Your best friend is baking paper since it's sturdy enough to keep everything together but flexible enough to roll with. Start by covering the length of the chicken with the longest slices of bacon, placing them in the middle of the board.

3. Get your first weave down, and everything else will follow.

4. Try to cut your chicken thighs into similarly sized pieces after trimming them. Using a meat tenderiser from Jaccard, tenderise the thighs.

5. Lay out your chicken thighs on additional baking paper before seasoning with Slow Burner BBQ Tex Mex rub.

6. Roll your chicken into a tight log after stuffing the inside of your thighs with mozzarella cheese and roasted red peppers.

7. Roll tightly after setting the chicken log on top of the bacon weave.

8. Boomas BBQ "Clucked and Plucked" and Slow Burner BBQ "Powerhouse Pork" should be used to rub the bacon.

9. Place on a rack and then put in your Flaming Coals offset smoker.

10. We are looking for an ambient pit temperature of 275f.

11. Every 20 to 25 minutes, spray apple juice on your bacon-wrapped chicken fatty to keep the internal temperature between 170 and 175 degrees.

12. Ten minutes before taking the bacon from the smoker, drizzle it with your chosen glaze to give it time to set. Suckle Buster's Honey Bbq Glaze & Finishing sauce and Canadian maple syrup are combined in the recipe for today. But you can also use your prefered BBQ sauce, the Flaming Coals Classic BBQ Sauce.

13. Allow the chicken to rest for 5 to 10 minutes before cutting. Serve immediately.
